Eggplant Parmigiana, the jewel of gastronomy

Also known as "Melanzane alla Parmigiana" in Italian, Eggplant Parmigiana is a classic southern dish. An explosion of southern flavors. Eggplants are often characteristic of Mediterranean cuisine and when they're gratinated with Parmesan, they're simply delicious!

Eggplant Parmigiana, the jewel of gastronomy

It primarily consists of sliced eggplant that's breaded, fried (or sometimes baked), and then layered with tomato sauce, cheese (often mozzarella), and sometimes grated Parmesan cheese, then baked.

The origins of the dish are debated. Here's a brief overview:

  1. Campania: Many believe the dish originated in Campania, which is home to Naples. The region has a rich tradition of using eggplant in various dishes. The name "parmigiana" in this theory doesn't necessarily refer to Parma, the northern Italian city or Parmesan cheese, but rather to the way the eggplant slices are layered, similar to the slats of a window shutter, known as "parmigiana" in Italian.
  2. Sicily: Another theory posits that the dish is from Sicily. The island has a history of Greek, Arab, and Spanish influences, and eggplant was a popular ingredient, thanks to its introduction by the Arabs. Some argue that the name "parmigiana" is a nod to the Sicilian word "parmiciana," which refers to the wooden slats of window shutters and again describes the layering of the dish.
  3. Parma Connection: Some suggest that there's a connection between the dish and the northern Italian region of Parma, primarily because of the use of Parmesan cheese. However, this theory is less widely accepted, as the dish is firmly rooted in the culinary traditions of southern Italy.

It's worth noting that dishes involving fried or baked layered vegetables with cheese and sauce can be found in other Mediterranean cuisines as well, but the specific combination and preparation of "Melanzane alla Parmigiana" is distinctly Italian.

Regardless of its exact origins, Eggplant Parmigiana has become a beloved dish not only in Italy but also around the world, with numerous variations and interpretations.
