Yogurt and cucumber dip
In general, "tzatziki" is the most widely recognized name for the yogurt and cucumber dip, especially in Western countries and in its native Greek cuisine. Here is a revisited version inspired from Khyar bi laban, a dish in Levantine cuisine that is similar in concept.
Combining yogurt and cucumber, as in tzatziki and similar dishes, brings together various nutritional and health benefits. - Two small cucumbers or half of a standard-sized cucumber (weighing 200g)
- 500g of Greek yogurt (either 0% or 2% fat)
- A single crushed and chopped garlic clove
- Fresh mint, finely chopped (2 tablespoons)
- Juice from half a lemon
- Salt, approximately 1/2 teaspoon
- One Medjoul date, finely chopped
Remove the skin from the cucumbers and slice them finely. For easier garlic chopping without it sticking to your knife, sprinkle some salt on both sides of the garlic. Combine all the other ingredients in a medium-sized bowl, incorporate the cucumber slices, and adjust the seasoning as needed. Chill in the refrigerator for about 30 minutes before serving.
