Zaalouk: Healthy choice
Zaalouk is a traditional Moroccan salad made primarily from eggplants (aubergines) and tomatoes. It is often seasoned with garlic, paprika, cumin, and sometimes with a bit of chili for some heat.
The vegetables are typically roasted or cooked down until they are soft, and then they are mashed and mixed with the spices, creating a spread-like consistency.
It can be served both warm or cold, and it is often used as a side dish, a dip with crusty bread, or even as a spread in sandwiches. It's a staple in many Moroccan meals and is often found alongside other salads and dishes in a traditional Moroccan spread.
Apart from its delicious taste, zaalouk is also appreciated for its healthy ingredients. Both eggplants and tomatoes are rich in nutrients and beneficial compounds. The spices not only add flavor but have been traditionally believed to offer various health benefits as well.
Given its origins in Moroccan cuisine, zaalouk has also made its way to other North African and even Middle Eastern countries, where it might be prepared with slight variations.
