Zesty Salsa & Creamy Avocado Butter

Simply add some butter, as creamy as it may be. Don't worry, you can never have too much. The salsa will balance everything out so that you end up with a fresh result, meticulously fine and nearly perfectly balanced. Make sure your avocados are nice and ripe and that your butter is very soft so that the two blend together properly.
There's no need to heat the butter beforehand, just leave it at room temperature for a few hours. However, you can prepare the salsa and avocado up to 1 day in advance if you want to speed up the process a bit without jeopardizing the final recipe. Then, store them separately in the refrigerator.

Ingredients:
- 2 or 3 very ripe avocados, at room temperature, flesh removed to yield 9oz/250g
- 1/4 cup / 60g of unsalted butter, softened and cubed
- Zest of 3 limes to obtain 2 tsp, then squeeze to get 2 tbsp of juice
- 1/2 cup / 10g of fresh dill, finely chopped
- 1/2 cup / 10g of roughly chopped tarragon or oregano leaves
- 7oz / 200g of cherry tomatoes, cut into quarters
- 2 tbsp of olive oil, plus a bit more for serving as needed
- Freshly ground black pepper
- 4 slices of sourdough bread
- 1 small garlic clove, peeled and cut in half
- 1/4 tsp of toasted and ground cumin seeds
Instructions:
- Place the avocado and butter into the bowl of a compact food processor along with half of the lime zest, half of the lime juice, and 1/2 teaspoon of salt. Process until the mixture is creamy and smooth, pausing to scrape down the sides as necessary. Transfer the mixture to a small bowl, and gently fold in two-thirds of the mixed tarragon, oregano, and dill. Chill in the refrigerator for 10 minutes.
- For the salsa, combine the quartered tomatoes, the remaining lime zest, the remaining lime juice, and olive oil in a bowl. Add a generous twist of fresh black pepper and set aside for the flavors to meld.
- Grill or toast the slices of sourdough bread. While still warm, gently rub one side of each slice with the halved garlic clove for a subtle aroma. Allow the bread to cool slightly before generously spreading each piece with the avocado butter. Top with the vibrant tomato salsa, sprinkle over the toasted cumin seeds and the rest of the herbs. Finish with another twist of black pepper and a light drizzle of olive oil. Serve immediately, inviting the flavors of the Mediterranean into your meal.
